This Israeli-style hummus is the best, smoothest and tastiest hummus I have ever had. It can be discerned from other types of hummus by its strong tahini presence. This hummus is very easy to make and provides a perfect protein-rich spread for your bread or side dish to a Mediterranean dinner.

Ingredients

For ± 1 bowl of hummus

  • 1 can (±240 grams) cooked chickpeas
  • 1 tsp baking soda
  • juice of 1 lemon
  • 4 garlic cloves
  • 1 cup (±200 grams) tahini
  • 1/2 cup (±120 ml) cold water
  • 1 tsp salt, or to taste
  • 1/2 tsp cumin powder
  • optionally, extra vierge olive oil as a topping

Directions

Drain the chickpeas. Add garlic cloves to the food processor and process until chopped. Then add the chickpeas, baking soda, juice of 1/2 a lemon, tahini and cold water. Process until the hummus is very smooth. Then add the rest of the lemon juice, salt and cumin powder to taste and mix the hummus. Optionally, add extra vierge olive oil as a topping.

Enjoy the hummus with fresh naan, pita, or other another type of bread, or serve with freshly grilled veggies on top!
