3 ways to incorporate more veggies into your sandwich

If you are struggling to eat enough veggies throughout the day, cannot incorporate enough veggies in your dinner, or just want a more filling lunch, try out these 3 ways to add veggies to your sandwich.

#1: Add a veggie burger to your sandwich

Nowadays, there are a lot of veggie burgers to choose from in supermarkets: mushroom, beetroot, or just a general veggie burger. Or, you can easily prepare your own 'burger' of celeriac. Cook a slice of celeriac (±1 cm) for . min, let it cool down, and bread the celeriac slice with flour, whisked egg, and breadcrumbs.

Fry the veggie burger with 1 tsp of olive oil. Add on top of your wholewheat sandwich with for example cottage cheese, rocket salad, and some salt and pepper.

In this way, you combine whole grains as carbs, cottage cheese as protein, olive oil as healthy fat, and the veggie burger & rocket salad as sources of minerals and vitamins. A lovely way to stay full for longer!

#2: Add sliced/grated veggies to your sandwich

You probably have thought of adding some slices of tomato or cucumber to your sandwich. But have you tried to add other veggies, like grated or sliced beetroot with some horseradish or balsamic vinegar?

My favorite veggie topping on toast is 1 grated beetroot with 1 tsp of horseradish, a couple of drops of lemon juice, with a sprinkle of dill, salt, and pepper. Add some cottage cheese if you want to add some protein. If you cannot get a hold of horseradish, you can leave it out, or try beetroot with balsamic vinegar instead.

#3: Make (or buy) a veggie spread

Veggie spreads are a lovely way to add some veggies to your sandwich. I like to top them with some cheese slices, cottage cheese, mozzarella, or just with some rocket salad.
