Minerals hold onto their chemical structure and are not broken down by heat, air, or acid. However, minerals can dissolve in water during cooking.

Minerals can be divided into 2 types of essential minerals:
- Major minerals or Macro-minerals: needed and stored in large amounts in the body.
- Calcium
- Magnesium
- Phosphorus
- Potassium
- Sodium
- Chlorine
2. Trace minerals: needed in very small amounts
- Iron
- Iodine
- Copper
- Zinc
- Selenium
- Manganese
- Molybdenum
- Chromium
- Fluoride
Both are equally important, just needed in different amounts!
