Mustard-celeriac soup

Mustard-celeriac soup

It's fall, the season of comforting soups. I'm calling out any mustard lovers to try out this healthy vegetable soup to warm you up!


Ingredients

For 4-6 servings

  • 1 small celeriac
  • 1 onion or 2 shallots
  • 2 garlic cloves
  • 1 tbsp of olive oil
  • 1/2 tsp of cumin powder, optional
  • 1 bouillon cube or broth
  • 3 tbsp of your favorite mustard
  • ground black pepper, to taste
  • optionally, any fresh herbs (parsley, dill, chives) as a topping

Directions

Peel the celeriac and cut into smaller chuncks. Mince the onion/shallots and garlic cloves. Heat up the olive oil in a big pan. Stir-fry the onion and garlic for about 1 min, add the cumin and bake for another minute. Then add the chuncks of celeriac and stir-fry for another minute before adding water or broth. The water should just cover the celeriac. Cook for about 15 min, or until the celeriac is soft. Add the bouillon cube, the mustard and some black pepper. Purée the soup until smooth.

Serve with freshly chopped herbs and enjoy!
