Nutritious sandwich spread

This nutritious sandwich spread with veggies and beans is perfect as a topping on your sandwich, toast, or crackers, or as a base for your pasta sauce!
Ingredients
- 100 grams of grape or Roma tomatoes
- 2 tomatoes
- 2 pointed red pepper
- 1 red onion
- 3 garlic cloves
- 2 tbsp of olive oil
- 1 tbsp of paprika powder
- 1 tbsp of oregano
- 1/2 tsp of chili powder
- 1 can of kidney beans
- 1 tbsp of balsamic vinegar
- 3 tbsp of lemon juice
- Salt & pepper to taste
Directions
Heat the oven to 200 degrees Celsius. Wash the veggies. Cut the tomatoes, pepper, and onion into big chunks. Place on a baking tray together with the garlic cloves wrapped in some aluminum foil. Sprinkle the olive oil and spices on the veggies. Roast in the oven for ±20-25 min.
Drain the kidney beans and stir on medium heat in a pan until the beans are almost dry.
Blend the roasted veggies, kidney beans, balsamic vinegar, lemon juice, salt, and pepper together. Add some more spices, balsamic vinegar, or lemon juice to taste.
Store in the fridge, and enjoy during the week!
