In the first Rainbow week, it's time for a richly flavored tomato soup with sweet pointed red pepper and thyme. Get ready to *excite* your taste buds and fill your body up with this healthy goodness.

Ingredients

For 4 servings:

  • 4 tomatoes
  • 1 sweet pointed red pepper
  • 1 onion (red, yellow, or white)
  • 2 garlic cloves
  • 1 tbsp of olive oil
  • 1 tsp of thyme, fresh or dried
  • 1 vegetable bouillon cube, or salt to taste
  • Pepper to taste

Directions

Cut the tomatoes and sweet pointed red pepper into smaller chunks. Mince the onion of your choice and the garlic cloves. Heat the olive oil in a pan and stir-fry the onion, garlic, and thyme for about 2 min. Then add the tomatoes and sweet pointed red pepper, and fry for another 2 min before adding water. The water should just cover the veggies. Cook for about 15 min, or until the veggies are soft. Add the bouillon cube and some black pepper. Purée the soup until smooth.
